How a hardener works
The hardener is a tunnel in which the food product passes for a few seconds over a refrigerated plate, without the use of ventilation or thermal insulation. During this short time, only the lower part of the product cools or freezes, creating a solid surface that facilitates subsequent processing (full freezing, packaging, transport).
This method prevents the product from taking on the shape or imperfections of the conveyor belt (typical of spiral tunnels) and reduces the dispersion of liquids or residues, especially in the case of marinated or moist foods.
In some cases, by increasing the contact time, the hardener can also be used to completely freeze small products or to rapidly reduce the temperature of freshly cooked foods, such as rice, which would otherwise risk becoming compact.
